1 kg of Premium beef Aroma – Koutsioftis Farm
1 glass of Xinomavro wine
1 white onion
2 tomatoes on the grater
1 glass of olive oil
Salt – pepper
Fresh thyme and oregano
1 bowl of grated Mpatzo cheese or headcheese
1+ litre of water
Put the meat, wine, sliced onion, tomato, oil, salt and pepper in a pan or pitcher.
Cover with water, stir and place in the oven for 3 hours at 200 degrees.
Watch every now and then to make sure the water doesn’t burn or run out.
10 minutes before removing from the oven, add the fresh herbs and the bajo cheese.
