COOKING INSTRUCTIONS FOR T-bone Beef

Add the oil to the hot pan and when it starts to smoke, add the steak. Reduce the heat slightly and cook the steak until browned, about 4 minutes on each side. Transfer the pan to the oven. Bake until an instant-read thermometer inserted into the side of the steak reads 60 degrees for medium-rare, at which point it takes about 6 to 8 minutes.
